This from my sister in law Jezzebelle AKA Jessine she was from a large family and they did many stretch your dollar meals when growing up in the early 50's.

Ingredients
- 8 slices bread, cubed
- 2 cups cooked chicken, diced
- 1/2 cup onion, chopped
- 2 tablespoons fresh parsley, snipped
- 1 small mushrooms, canned
- 1/2 cup mayonnaise
- 3 medium eggs
- 2 cups milk
- 1/2 teaspoon salt
- dash pepper
- 1 can cream of chicken soup
- 1 cup mozzarella cheese, shredded
How To Make do ahead chicken casserole

Step 1Cut bread in 1 inch cubes, place, half of them in bottom of buttered 9 x 13 inch baking dish, combine chicken, onion, parsley, mushrooms, mayonnaise and seasonings spoon over bread, top with remaining bread cubes. Beat eggs slightly and blend in milk, pour over and cover casserole, refrigerate over night. Just before baking top with undiluted soup.

Step 2Bake at 325 about 1 hour until set, sprinkle with cheese and Finish baking until cheese is melted, let stand about 10 minutes then serve
