curried chicken and broccoli casserole
I have tweaked this recipe over the years, and it makes an easy and delicious casserole. Serve with rolls and a salad if you prefer.

Ingredients
- 1 package frozen broccoli florets (10 oz)
- 2 - 3 cups chopped rotisserie chicken
- 1 can cream of mushroom soup (10.5 oz)
- 1/2 cup mayonnaise
- 1 tablespoon fresh squeezed lemon juice
- 3/4 cup shredded sharp cheddar cheese, divided
- 1 teaspoon mild curry powder, more to taste
- 1/2 cup Panko bread crumbs
How To Make curried chicken and broccoli casserole

Step 1Cook broccoli florets according to package instructions.

Step 2Layer broccoli and chicken in a prepared baking dish.

Step 3Combine soup, mayo, lemon juice, curry powder (to taste), and 1/2 cup shredded cheese in a bowl and mix well.

Step 4Spread the mixture over the top of the chicken and broccoli.

Step 5Combine the remaining cheese with Panko bread crumbs and sprinkle the mixture on the top of the casserole.

Step 6Bake at 350 degrees for 35 minutes until topping is lightly browned and casserole is bubbly.
