I have tweaked this recipe over the years, and it makes an easy and delicious casserole. Serve with rolls and a salad if you prefer.

Ingredients

  • 1 package frozen broccoli florets (10 oz)
  • 2 - 3 cups chopped rotisserie chicken
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh squeezed lemon juice
  • 3/4 cup shredded sharp cheddar cheese, divided
  • 1 teaspoon mild curry powder, more to taste
  • 1/2 cup Panko bread crumbs

How To Make curried chicken and broccoli casserole

  • Step 1
    Cook broccoli florets according to package instructions.
  • Step 2
    Layer broccoli and chicken in a prepared baking dish.
  • Step 3
    Combine soup, mayo, lemon juice, curry powder (to taste), and 1/2 cup shredded cheese in a bowl and mix well.
  • Step 4
    Spread the mixture over the top of the chicken and broccoli.
  • Step 5
    Combine the remaining cheese with Panko bread crumbs and sprinkle the mixture on the top of the casserole.
  • Step 6
    Bake at 350 degrees for 35 minutes until topping is lightly browned and casserole is bubbly.
