This pasta dish will serve 6 or 8 as a full meal. It is so creamy and delicious that you will name it as one of your 'comfort' foods!

Ingredients
- 31/2 cups chicken stock
- 2 cups water
- 12 ounces linguine pasta
- 4 ounces goat or ricotta cheese
- 1/4 cup grated parmaesan cheese
- 1 can diced tomatoes (14.5 oz)
- 4 cups fresh baby spinach
How To Make creamy tomato pasta

Step 1Bring stock and water to a boil for pasta.

Step 2Break pasta in half and place in stock. Cook 12-15 minutes stirring occasionally, or until most of the liquid is absorbed.

Step 3Stir in cheeses until blended. Add tomatoes and spinach, stir until spinach wilts.

Step 4I wilted some of the spinach before I put it in with the pasta.
