Ingredients
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup chicken stock
- 1 cup heavy cream
- 2 tablespoons dry sherry
- 4 cups chopped rotisserie chicken
- 1 tablespoon fresh thyme leaves
- salt and pepper
- 2 tablespoons champagne vinegar
- RICE
- 2 cups chicken stock
- 1 cup jasmine Rice
- salt
- scallions, for garnish
How To Make creamy chicken and rice

Step 1Start the rice in a rice cooker or on the stove. Place the chicken stock in the rice cooker and add the rice. Cook until the stock is absorbed in the rice. Taste and adjust for seasoning.

Step 2In a large pot, add the butter. Once melted, add the flour and whisk, and cook for 1 minute.

Step 3Add the chicken stock and heavy cream, and continue whisking.

Step 4Add the sherry, cooked chicken, and thyme. Cook until warmed through, and add the vinegar.

Step 5Serve the chicken mixture over the rice and garnish with scallions.
