country-style squash dressing
Modified this recipe from one I found in a local town cookbook. Cooking time does not include cooking the squash and cornbread.

Ingredients
- 2 cups steamed yellow squash, mashed
- 1/2 onion, grated
- 1 stick butter, melted
- 2 eggs
- salt and pepper
- 1 can cream of chicken soup
- 2 cups cooked jalapeno cornbread, crumbled (can use regular cornbread)
- 1/2 cup grated cheese, sharp cheddar or monterrey jack - your choice
How To Make country-style squash dressing

Step 1Steam squash (or boil) until tender and mash well. Cook cornbread according to package instructions, cool and crumble.

Step 2Combine balance of ingredients and mix well.

Step 3Bake in a greased casserole dish at 400 degrees for approximately 30 minutes.
