Modified this recipe from one I found in a local town cookbook. Cooking time does not include cooking the squash and cornbread.

Ingredients For country-style squash dressing

  • 2 c
    steamed yellow squash, mashed
  • 1/2
    onion, grated
  • 1 stick
    butter, melted
  • 2
    eggs
  • salt and pepper
  • 1 can
    cream of chicken soup
  • 2 c
    cooked jalapeno cornbread, crumbled (can use regular cornbread)
  • 1/2 c
    grated cheese, sharp cheddar or monterrey jack - your choice

How To Make country-style squash dressing

  • 1
    Steam squash (or boil) until tender and mash well. Cook cornbread according to package instructions, cool and crumble.

    Combine balance of ingredients and mix well.

    Bake in a greased casserole dish at 400 degrees for approximately 30 minutes.
