I took part in a Head Start recipe cook off with a rice theme in 2000. This one was one I entered, and my daughter LOVED it!

Ingredients
- 2 - 10 1/2 oz cans cream of mushroom soup
- 10 1/2 ounces cream of chicken soup
- 1 can mushrooms
- 1 bag frozen chopped broccoli
- 2 1/2 cups milk
- 3 cups minute rice, uncooked
- 1 pound velveeta
- 1 pound sausage, ham or chicken
- - salt and pepper
How To Make country casserole

Step 1Cook meat until well done, set aside. Pour milk into microwave safe bowl, cube cheese and add to milk. Cook 5 min on high. Cream soups together, add broccoli, rice and mushrooms. Mix well and add meat. Stir cheese, cook another 3-4 min to melt completely. Pour over other ingredients, salt and pepper. Pour into 9x13. Bake 45-60 min at 375 degrees or until golden brown.

Step 2Try with salad and garlic bread, or as a side dish with no meat added and fried chicken.
