Made this for the first time recently, and my son hasn't stopped praising it since. We have now added it to the regular rotation. I have to admit I have enjoyed it myself.

Ingredients

  • FOR THE BEEF AND SAUSAGE
  • 1 pound ground beef
  • 1 pound ground Italian sausage
  • 1 large onion
  • garlic powder, to taste
  • 1 bay leaf
  • 2 tablespoons tomato paste
  • 1 cup beef broth or stock
  • 1 tablespoon Montreal steak seasoning (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 2 bags frozen vegetables of choice (I used mixed vegetables and corn)
  • FOR THE POTATOES
  • 6 - 8 russet potatoes
  • heavy cream, to taste
  • butter, to taste
  • to taste grated Parmesan cheese, to taste
  • garlic (minced or powder), to taste

How To Make cottage pie

  • Step 1
    Wash the potatoes. Peel and cut into pieces. I rinse mine a couple times to reduce the starch, but you can skip this step if you prefer. Cover with water in a pot and cook until fork-tender.
  • Step 2
    In a large skillet on medium heat, brown the ground beef and sausage breaking it apart. Add seasonings except bay leaf. Cook until browned and no longer pink. Remove from skillet and place in bowl.
  • Step 3
    Into an empty skillet, place the chopped onions to soften. If you prefer minced garlic over garlic powder, add it here.
  • Step 4
    Once fragrant, add the meat back to the skillet. Add beef broth, tomato paste, and bay leaf. Add the frozen vegetables. Allow to cook to help flavors blend and until the liquid is reduced.
  • Step 5
    Preheat oven to 375 degrees F. Spray a 13 x 9 casserole dish with cooking spray. Once the beef and vegetable mixture is done, add it to the prepared casserole dish.
  • Step 6
    Once the potatoes are cooked, drain and mash them. I add heavy cream, butter, grated Parmesan, and garlic powder to mine, but do yours however your family prefers.
  • Step 7
    Once the potatoes are mashed, place them atop the beef and vegetable mixture. Spread to cover the top. Using a fork, make ridges over the top of the potatoes in a pattern, and sprinkle with cheese.
  • Step 8
    Place the casserole in the oven for about 15 to 20 minutes to melt the cheese.
