Total comfort food, at its best. Love making this as the temps begin to drop, during the autumn/winter seasons. I am giving you two ways to make it. One is with a creamy dairy base, and the other is with a clear, dairy-free base. In addition, you can choose homemade egg noodles or comfy dumplings, up to you. Or, you could leave the dumplings/egg noodles out and just make it a veggie soup. My photos reflect using the dairy-free version with dumplings. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 - 3 medium chicken breasts, cut into bite-size pieces
- butter and/or oil, as needed
- salt/pepper, as needed
- egg noodles, or dumplings, recipes to follow
- 3 cups dairy, or non-dairy soup bases, recipes to follow
- OPTIONAL ITEMS
- garlic, minced
- salt, Kosher variety, fine grind
- paprika, mild, or hot, your choice
- white pepper, freshly ground
- 1 can diced tomatoes, thoroughly drained
- mixed veggies (peas, carrots, onions, etc.

Step 1PREP/PREPARE

Step 2What will you need? You can sauté the chicken and make the soup in a single pot. I would recommend a heavy-bottomed pot with a lid. If you have a Dutch oven, that would be perfect. I am using a sauté pan for the chicken and a Le Creuset Dutch oven for the soup… My choice.

Step 3What to serve with it? This is not designed as a side dish, and it stands on its own. I would, however, serve it with some crusty bread and maybe a side salad.

Step 4How to store it? This recipe can be frozen. If you are using noodles, they will be a bit softer, but still good.

Step 5Additional Items The additional ingredients represent a few spices and veggies that I think would complement this recipe. I always like to add some veggies and a bit of garlic, but that is up to you. They are just suggestions.

Step 7Gather your ingredients (mise en place).

Step 8Choose the dairy or non-dairy version of the base, and make the recipe. Choose the egg noodles or dumplings, and make the recipe.

Step 9You can substitute store-bought noodles or dumplings, if you choose.

Step 10Sprinkle the chicken with a bit of salt and pepper.

Step 11Add some oil or butter to a skillet or soup pot over medium heat.

Step 12Add the chicken to the pan.

Step 13Sauté until cooked through and starting to lightly brown, about 6 – 8 minutes.

Step 14Add the soup base, chicken, and any additional items to the pot, I added some peas and carrots.

Step 15Stir to combine.

Step 16Cover and place at a low simmer for about 30 minutes.

Step 17If you are using the dumplings, add them now. If you are using egg noodles, add them after about 30 minutes of simmering.

Step 18Cook until the dumplings are fluffy, or the noodles are cooked through, about an additional 30 minutes. Total cooking time, about an hour.

Step 20Serve with a dollop of sour cream, if desired, and some nice crusty bread. Enjoy.
