Chile Relleno - what a great dish! We really enjoy this version, which does not use whole chili peppers. I found the original recipe in a magazine many years ago and adapted it to our tastes, and here we are.

Ingredients For chiles rellenos squares

3 cshredded monterey jack cheese

1 1/2 cshredded cheddar cheese

2 candiced green chilies - heat level is your choice (4 oz ea)

2 lgeggs

2 Tbspmilk
-
1 Tbspall-purpose flour
How To Make chiles rellenos squares

1Preheat oven to 375 degrees F. Lightly spray an 8x8 baking dish.

2Sprinkle half of each of the cheeses onto the bottom of the prepared baking dish.

3Next, place an even layer of the chiles and top with the remaining cheeses.

4Whisk together eggs, milk, and flour until blended.

5Gently pour over the top of the cheese and chilies.

6Bake, uncovered, for 25 - 30 minutes or until set.

7Cool 15 minutes before cutting.
