Chile Relleno - what a great dish! We really enjoy this version, which does not use whole chili peppers. I found the original recipe in a magazine many years ago and adapted it to our tastes, and here we are.

Ingredients
- 3 cups shredded monterey jack cheese
- 1 1/2 cups shredded cheddar cheese
- 2 cans diced green chilies - heat level is your choice (4 oz ea)
- 2 large eggs
- 2 tablespoons milk
- 1 tablespoon all-purpose flour
How To Make chiles rellenos squares

Step 1Preheat oven to 375 degrees F. Lightly spray an 8x8 baking dish.

Step 2Sprinkle half of each of the cheeses onto the bottom of the prepared baking dish.

Step 3Next, place an even layer of the chiles and top with the remaining cheeses.

Step 4Whisk together eggs, milk, and flour until blended.

Step 5Gently pour over the top of the cheese and chilies.

Step 6Bake, uncovered, for 25 - 30 minutes or until set.

Step 7Cool 15 minutes before cutting.
