Chile Relleno - what a great dish! We really enjoy this version, which does not use whole chili peppers. I found the original recipe in a magazine many years ago and adapted it to our tastes, and here we are.

Ingredients For chiles rellenos squares

  • 3 c
    shredded monterey jack cheese
  • 1 1/2 c
    shredded cheddar cheese
  • 2 can
    diced green chilies - heat level is your choice (4 oz ea)
  • 2 lg
    eggs
  • 2 Tbsp
    milk
  • 1 Tbsp
    all-purpose flour

How To Make chiles rellenos squares

    Preheat oven to 375 degrees F. Lightly spray an 8x8 baking dish.

    Sprinkle half of each of the cheeses onto the bottom of the prepared baking dish.

    Next, place an even layer of the chiles and top with the remaining cheeses.

    Whisk together eggs, milk, and flour until blended.

    Gently pour over the top of the cheese and chilies.

    Bake, uncovered, for 25 - 30 minutes or until set.

    Cool 15 minutes before cutting.
