chicken spinach and artichoke mac and cheese
This is a crowd pleaser. Cheese, chicken, artichokes, spinach and pasta, the combination is comfort food at its best!

Ingredients
- 3 cups chicken, cooked
- 16 ounces pasta of choice
- 3 cups cheese, i use 1 cup each fontina, irish white cheddar and gruyer
- 1 bag spinach, blanched
- 1 can artichoke hearts, 14 oz.
- 3 cups whole milk
- 6 ounces butter
- 1/3 cup all-purpose flour
- 1/2 teaspoon dried mustard
- 1/4 teaspoon ground nutmeg
- - salt and white pepper, to taste
- TOPPING
- 1 1/2 cups panko bread crumbs
- 1/2 cup parmesan cheese
- 1/2 teaspoon white pepper
- 6 ounces butter, softend
How To Make chicken spinach and artichoke mac and cheese

Step 1Preheat oven to 375 degrees F.

Step 2Heat butter in a large sized skillet until melted.

Step 3Add flour, dried mustard and nutmeg, whisking constantly until the rue is light brown (not tan colored but, brown) about three to four minutes.

Step 4Add milk, 1/2 cup at a time, until the mixture is smooth and starting to thicken.

Step 5When all of the milk is absorbed add the cheese and continue whisking until the mixture is again smooth, about two minutes.

Step 6Place all ingredients, except topping, into a large bowl and gently mix until all ingredients are evenly distributed.

Step 7Spray a 9x12 oven proof dish with Pam.

Step 8Pour mixture into the prepared pan and smooth the top as best as you can.

Step 9Mix the ingredient for the topping and distribute evenly over the mac and cheese, covering any exposed macaroni.

Step 10Place in the preheated oven, uncovered, for 30 minutes or until browned.
