This is an easy recipe for pot pie without having to make your own crust.

Ingredients

  • 1 stick butter, divided
  • 1 small onion, diced
  • 2 - chicken breast halves, cooked and diced
  • 2 bags frozen mixed vegetables
  • 1 can potatoes, diced (15oz)
  • 4 tablespoons flour
  • 16 ounces chicken broth
  • 1 can jumbo biscuits

How To Make chicken pot pie

  • Step 1
    Melt 1/2 of the stick of butter in a large pan (I use a non-stick Dutch oven). Add onion and saute until translucent.
  • Step 2
    Add veggies, potatoes and chicken to the onions and cook until heated.
  • Step 3
    Add the rest of the stick of butter to the pan and sprinkle the flour over the top. Cook a couple minutes until the flour is incorporated.
  • Step 4
    Add the chicken broth and cook over medium heat until the sauce thickens.
  • Step 5
    Pour the cooked mixture into a sprayed or butter 9x13 casserole.
  • Step 6
    Cut biscuits into 6 pieces each and scatter over top of mixture.
  • Ready to bake
    Step 7
    Bake at 350 for approximately 30 minutes or until the biscuits are golden brown.
