When my parents went on business trips, and Ma and Pa came to take care of us, Ma would make this amazing casserole, and I LOVED IT! She always made it for us because she knew it was a favorite of mine. This is my version of her recipe.

- chicken, cooked, chopped into chunks (or turkey...leftovers work fine too)
- frozen broccoli and cauliflower, thawed
- white rice, cooked
- CHEESE SAUCE
- 1 stick butter or margarine
- 1 cup flour
- milk
- velveeta, cubed

Step 1Butter bottom of 9x13 and leave a few chunks of it behind, in other words, don't be perfect in the buttering! LOL Add cooked rice, thawed broccoli and cauliflower mix, and chicken. Stir together so they are evenly combined. Cover with cheese sauce. Put foil over the top and bake at 350 degrees until bubbly (depends upon how much of the ingredients you use, but about 20-30 min usually.

Step 2To make cheese sauce: melt stick of butter in sauce pan on stove top. Then add 1 cup flour, stir to combine so the flour isn't in chunks. Then add milk, enough to make sauce thicken, stirring constantly over low to med heat. Make sure not to have the sauce stick to the bottom and burn. Add chunks of Velveeta to taste, melt completely. Then it's ready to pour over the casserole.

Step 3When I make the cheese sauce, I add Accent, a little dill, and some garlic powder to the pan once the cheese melts. Also, Ma only used broccoli, but I like the broccoli and cauliflower, so that's how I make mine. You could also use turkey if you wanted...
