I love this casserole, I use Bell's Poultry seasoning, but any will do. You could also use a rotisserie chicken.

Ingredients

  • 1 3/4 pounds cooked chicken breast, shredded
  • 16 ounces broccoli florets, thawed
  • 3 cups brown rice, cooked
  • 3/4 cup sharp cheddar cheese, shredded
  • 3 cups chicken broth
  • 1/41 cup flour
  • 1 teaspoon poultry seasoning
  • 1/4 cup wine, chardonay or any dry white
  • 1/2 cup romano cheese, grated
  • 1 teaspoon gravy master

How To Make chicken and broccoli casserole

  • Step 1
    Preheat oven to 350 degrees, spray 9x13 baking dish with cooking spray
  • Step 2
    in medium saucepan. Whisk flour into broth, add poultry seasoning, Gravy Master and wine. Heat to boiling, then simmer until thickened. Enough to stick to back of spoon.
  • Step 3
    Spread rice in bottom of baking dish, arrange chicken and broccoli. Sprinkle shredded cheddar over everything. Pour gravy over all, stir slightly, leaving rice intact
  • Step 4
    Sprinkle with Romano cheese over top, cover tightly with foil. Bake 45 minutes, then remove foil and cook another 10 minutes. Let set 5 minutes and serve
