cheesy chicken pasta
I needed a dish that would serve as a pasta with chicken and cheese for my daughter in college. I whipped this up and everyone loved it. I packaged several vacuum seal bags and put in freezer for the college dorm room tiny freezer. It was a hit.

Ingredients
- INSTANT POT SHREDDED CHICKEN
- 2 large chicken breast
- 3 cups chicken broth
- 2 stalks celery
- 1 - salt and pepper to taste
- 1 pound spaghetti
- 1 stick butter
- 1/4 cup chopped onions
- 1/2 cup flour
- 1/2 cup heavy whipping cream
- 2 cups milk (or more)
- 1/2 cup velveeta cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cottage cheese
- salt and pepper to taste
How To Make cheesy chicken pasta

Step 1put chicken breast, celery stalks, and chicken broth in instant pot and cook 25 minutes on high. Use hand mixer to shred chicken after cooked.

Step 2Cook spaghetti 10 minutes and drain. (I use a regular stove top pot for this step.)

Step 3put butter and onion in pan and saute. Add flour, stir and cook. Add heavy whipping cream and milk as needed to make sauce. Add Velveeta and cheddar.

Step 4Mix chicken, spaghetti, and sauce in large bowl. Season to taste. Put in 9 x 13 dish and sprinkle cheese on top. Bake 350 for 30 minutes until bubbly.
