Fresh mushrooms, onion, and broccoli sprinkled with jasmine rice makes this skillet dinner meal special. I had all of these ingredients in my fridge and freezer so decided to make up this cheesy dinner. I’m good at making up recipes with stuff that I already have on hand kind of comes in handy when you are a seasoned cook. A sprinkle of thyme was also added for a bit of tastiness. Hubby loves this complete meal and so do I of course.

Ingredients

  • 1 pint fresh cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 6 tablespoons butter, divided
  • 2 cups frozen broccoli, thawed
  • 1 pound chicken breast, cubed or shredded
  • 1 1/2 cups jasmin rice
  • 2 1/2 cups chicken broth/chicken stock
  • 1 1/2 cups mexican blend shredded cheese

How To Make cheesy chicken broccoli mushroomskillet dinner

  • Step 1
    Secure a tall nonstick skillet. Add in 3 tablespoons of butter and sauté mushrooms and onions on high heat until softened, and the onions are translucent.
  • Step 2
    Add in broccoli and stir to combine. Add in shredded or chunked chicken. Add in the rest of the three pads of butter.
  • Step 3
    Continue to combine with a wooden spoon. Sprinkle in 1 1/2 cups of jasmine rice. Stir to combine as well.
  • Step 4
    Reduce the heat to medium and add chicken broth or stock.
  • Step 5
    Stir once again to combined making sure everything is incorporated. Lower to a simmer and cover until the liquid has absorbed into the rice, about 8 to 10 minutes.
  • Step 6
    Once the liquid has been absorbed, remove the lid and sprinkle cheese over the rice and cover with lid.
  • Step 7
    Turn off the burner and serve up hot! One complete meal, ready to eat!
