cheesy broccoli chicken casserole with ritz topping
Some of the best recipes come from chats with friends, sometimes at the pool. I was intrigued with the idea of using condensed cheddar cheese soup, which I’d never bought, so I thought I’d play with this recipe because that’s what I do. =^..^= They used whole chicken breasts. I cubed mine. They used more paprika; I used a little, along with a pinch of turmeric. Milk vs. chicken broth for the sauce. We all used broccoli because, well, broccoli, but other veggies would work. I went with Ritz crackers on top instead of saltines with Parmesan sprinkles. Your choice?

Ingredients
- 12 ounces broccoli florets, cooked
- ~3 pound boneless skinless chicken breasts (or thighs)
- some salt & pepper
- 1 can condensed cheddar cheese soup
- 1 cup milk
- 1/2 teaspoon paprika
- 1/8 teaspoon turmeric, optional
- 8 ounces shredded cheddar cheese, divided in half
- ~12 Ritz crackers, crushed

Step 1Preheat oven to 350 degrees F. Mist a 13 x 9” baking dish with cooking spray.

Step 2If you have a steamer bag of broccoli, cook it now. If you’re starting with fresh broccoli, cook it to your desired preference, knowing it will cook more in the oven. Drain, if necessary.

Step 3Cube* chicken and put it in the prepared baking dish. Season with salt and pepper. *If you prefer, leave chicken breasts whole for a fancier presentation. In this case, you may need to cook them a little longer, depending on the thickness of the chicken breast, to reach that safe 160°F for chicken.

Step 4Add broccoli to the chicken in the baking dish.

Step 5In a medium bowl, whisk together the soup, milk, paprika, and turmeric.

Step 6Add half the shredded cheese to the soup mixture and stir together.

Step 7Pour the soup mixture over the chicken and broccoli and even it out.

Step 8Add the remaining shredded cheese and crumbled Ritz crackers over everything.

Step 9Bake for around 30-35 minutes if the chicken is cubed or until the chicken reaches 160°F.
