I love making casseroles!!! Even though it's a little more time consuming with prep time, it's totally worth it!! My family loves this dish! It has just the right amount of spice, and the creamy cheesy texture is what comfort food is all about!! If there are any leftovers, it reheats well the next day!!

Ingredients For cheesy beefy dorito casserole

  • 1 1/2 lb
    ground beef
  • 1 lg
    onion
  • 1 pkg
    cheesy taco seasoning
  • 1 pkg
    taco seasoning mix
  • 1 can
    kidney beans
  • 1 can
    corn
  • 1 can
    cream of mushroom soup
  • 1 can
    fiesta nacho cheese soup
  • 1 can
    rotel
  • 1 can
    evaporated milk
  • 1 bag
    family size doritos
  • 4 c
    shredded mexican blend cheese
  • 8 slice
    american cheese
  • sour cream (optional)

How To Make cheesy beefy dorito casserole

    In a large skillet brown ground beef with chopped onion. Drain.
  • Browned meat with kidney beans, and taco seasoning.

    Add 2 packets of taco seasoning and the kidney beans. Simmer for 10 minutes, or until sauce is reduced to a thick mixture.
  • Soups, corn and rotel.

    Add soups, corn, rotel, and milk. Mix well and simmer for another 10 minutes.
  • Top with both cheeses.

    In a 9 x 13 casserole dish, add a layer of crushed Doritos, top with meat and soup mixture, then 1 bag of cheese and 8 slices of American cheese. Repeat layers 1 more time, minus the american cheese. Reserve some Doritos to top casserole.
  • Delicious!!

    Bake at 375 covered for 30 minutes. Remove foil and cook another 15 minutes. Top with Doritos and serve with sour cream and enjoy!!
