Ingredients
- 3 ounces margarine
- 1 1/2 ounces whole wheat flour
- 1 teaspoon sea salt
- - fresh ground black pepper
- 2/3 pint vegetable stock
- 8 ounces milk or soya milk
- 3 ounces mushrooms, chopped
- 1 tablespoon chopped onion
- - vegetable oil
- 5 ounces cashew nuts
- 2 ounces black olives, stoned, pitted, sliced
- 2 tablespoons white wine, optional
How To Make cashew nut casserole (mock chicken), mark

Step 1Melt margarine in pan, stir in flour, sea salt and pepper. Take pan from heat and slowly add milk and vegetable stock and blend. Return pan to heat and stir constantly until it boils.

Step 2Saute mushroom and onion in a little oil and add to pan. Add cashews, wine if using, and olives. Simmer gently for about 20 min.

Step 3Serve over brown rice, with a side green salad.
