This casserole is filling and a perfect choice for the campground, picnic or backyard barbecue. It's really easy to make, too. You can cook it on an outdoor grill or oven-bake it (and the instructions include steps for both cooking methods).

Ingredients For camping casserole

  • 1 (16-oz) can
    bush's best original baked beans
  • 1 (16-oz) pkg
    angus beef franks, thinly sliced
  • 1 (8.75oz) can
    kernel corn, drained
  • 1 lg
    tomato, chopped
  • 4 md
    green onions, choppd
  • 1 cup
    cheddar cheese, shredded
  • 2 cups
    corn chips
  • SERVING SUGGESTIONS:
  • serve it with fresh-baked cornbread or corn muffins

How To Make camping casserole

    FOR OVEN BAKING - Preheat oven to 350°F. FOR GRILLING - preheat outdoor grill to 375°F.

    Spray a 9x13-inch baking pan with non-stick cooking spray. IF GRILLING, BE SURE THE BAKING PAN IS APPROVED FOR HOT GRILL TOPS.

    Pour baked beans into the coated baking pan. Layer beef franks over the beans. Spread drained corn on top of the franks layer. Top with tomatoes, onions and cheese. Spread the corn chips on top. (The corn chips can be left whole or lightly crushed, whichever you prefer.)

    TO GRILL - Completely wrap the casserole in foil. Place the baking dish on the grill away from direct heat. Heat casserole for 15 to 20 minutes. When casserole is done, carefully slide a flat baking sheet underneath the baking pan, and remove hot baking pan from grill. Serve immediately. TO OVEN-BAKE - Cover baking dish with foil, and bake in oven for 30 minutes. Remove foil and bake, uncovered, for 5 more minutes. Serve immediately.
