If your using natural brown rice allow at least another 15 mins for cooking. I've never been able to cook brown rice in much under an hour.

Ingredients

  • 14 ounces reduced sodium chicken broth
  • 2 cups whole grain rice
  • 1 tablespoon olive oil
  • 2 - chicken sausages, as low fat as posible
  • 1 - bell pepper, diced
  • 1 small onion, diced
  • 1 cup celery, diced
  • 1 cup shrimp, peeled and deveined
  • 2 teaspoons chili powder or to taste
  • 2 tablespoons cumin
  • 1 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, chopped
  • - salt, pepper and hot sauce to taste

How To Make cajun jambalaya, diabetic

  • Step 1
    In a medium pot, bring chicken broth to a boil. Add rice, cover and reduce heat to simmer for about 30 minutes.
  • Step 2
    Meanwhile, in a medium skillet, heat oil, then add whole chicken sausages. Allow sausages to cook on one side (about 5 minutes) then flip.
  • Step 3
    Add onion, bell pepper, celery to skillet and season with chili powder, cumin, cayenne pepper, salt, and pepper. Reduce heat and cover, allowing to simmer for 15 minutes, adding shrimp about 5 mins before finish time. Remove sausage from skillet and cut into slices.
  • Step 4
    Transfer sausages, shrimp, and veggies to pot and stir to combine with rice. Add hot sauce to taste and garnish with parsley. Serve and enjoy!
