Ingredients

  • 3 cups medium pasta shells
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/4 cup half and half
  • 2 cups shredded cheddar cheese

How To Make butternut squash mac and cheese

  • Step 1
    Cook pasta according to package directions.
  • Step 2
    Place peeled and cubed butternut squash in a saucepan; add water to cover. Bring to a boil. Cook, covered, for 10 minutes until tender.
  • Step 3
    Mash the butternut squash.
  • Step 4
    Preheat oven to 350 degrees. Grease 8 8-inch square baking pan.
  • Step 5
    Melt butter in a saucepan. Whisk in flour.
  • Step 6
    Gradually whisk in half and half and milk. Simmer and stir occasionally.
  • Step 7
    Add milk mixture to the mashed butternut squash.
  • Step 8
    Stir in cheese until melted.
  • Step 9
    Add drained pasta to the squash mixture.
  • Step 10
    Transfer to a greased pan.
  • Step 11
    Bake for 15-20 minutes, until golden brown.
