Ingredients
- 3 cups medium pasta shells
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1/4 cup half and half
- 2 cups shredded cheddar cheese
How To Make butternut squash mac and cheese

Step 1Cook pasta according to package directions.

Step 2Place peeled and cubed butternut squash in a saucepan; add water to cover. Bring to a boil. Cook, covered, for 10 minutes until tender.

Step 3Mash the butternut squash.

Step 4Preheat oven to 350 degrees. Grease 8 8-inch square baking pan.

Step 5Melt butter in a saucepan. Whisk in flour.

Step 6Gradually whisk in half and half and milk. Simmer and stir occasionally.

Step 7Add milk mixture to the mashed butternut squash.

Step 8Stir in cheese until melted.

Step 9Add drained pasta to the squash mixture.

Step 10Transfer to a greased pan.

Step 11Bake for 15-20 minutes, until golden brown.
