The name came about for me because it originally called for the Big John brand of baked beans. They are no longer found, but the name stuck. You can't go wrong with yummy baked beans, cheese and corn chips! The original recipe was given to me by a classmate from college. Her husband was a high school football coach and they served this to the boys for dinner before games. If it can satisfy hungry teenagers it has to be good!

Ingredients

  • 1/2 pound bacon - cut into pieces
  • 1/2 large onion - chopped
  • 2 cloves minced garlic
  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 cup brown sugar, firmly packed
  • 2 tablespoons red wine vinegar
  • 2 tablespoons mustard
  • 1 can baked beans (28 oz can)
  • 1 can pork and beans (15 oz)
  • 2 cans green beans (15 oz) drained
  • 2 cups corn chips (crushed)
  • 2 cups shredded cheddar cheese

How To Make big john casserole

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Cook bacon, onion and garlic till bacon is cooked through and onion is soft. Add hamburger and pork and cook till done. Drain off fat, season w/salt and pepper.
  • Step 3
    In large bowl mix brown sugar, vinegar and mustard; add beans. Add bean mixture to meat.
  • Step 4
    Pour mixture into a 9x13 pan. Bake @ 350° for 30-45 minutes or till bubbly. Top with cheese and corn chips, return to oven for 5-10 minutes or till cheese is melted.
