The name came about for me because it originally called for the Big John brand of baked beans. They are no longer found, but the name stuck. You can't go wrong with yummy baked beans, cheese and corn chips! The original recipe was given to me by a classmate from college. Her husband was a high school football coach and they served this to the boys for dinner before games. If it can satisfy hungry teenagers it has to be good!

Ingredients For big john casserole

1/2 lbbacon - cut into pieces

1/2 lgonion - chopped

2 cloveminced garlic

1 lbground beef
-
1 lbground pork
-
1/2 cbrown sugar, firmly packed

2 Tbspred wine vinegar

2 Tbspmustard
-
1 canbaked beans (28 oz can)

1 canpork and beans (15 oz)

2 cangreen beans (15 oz) drained

2 ccorn chips (crushed)

2 cshredded cheddar cheese
How To Make big john casserole

1Preheat oven to 350 degrees.

2Cook bacon, onion and garlic till bacon is cooked through and onion is soft. Add hamburger and pork and cook till done. Drain off fat, season w/salt and pepper.

3In large bowl mix brown sugar, vinegar and mustard; add beans. Add bean mixture to meat.

4Pour mixture into a 9x13 pan. Bake @ 350° for 30-45 minutes or till bubbly. Top with cheese and corn chips, return to oven for 5-10 minutes or till cheese is melted.
