Had some leftover beef so I made this tonight.

  • 6 c
    salted boiling water
  • 2 c
    shell macaroni (or whatever kind you prefer)
  • 1 lb
    beef (cubed)
  • 1/2 c
  • dash(es)
    salt and pepper
  • 1 small
    onion ( diced)
  • 3 clove
    garlic (diced)
  • 2 c
    mushrooms (sliced)
  • 1 c
    beef broth
  • 2 can(s)
    cream of mushroom soup( 10 1/4 oz)
  • 1 can(s)
  • 1 c
    sour cream, fat-free
  • 1/2 c

How to Make Beef Stroganoff Casserole


  1. Add macaroni to the boiling water, bring back to boil turn off and let stand.
  2. Add beef to the flour , salt and pepper and coat well, shake excess flour off. In large pan with some oil let beef brown.
  3. Remove from pan, add onion and garlic sauté on low for about 5 minutes then add mushrooms and cook another 5 minutes. Add beef.
  4. Add beef broth and mushroom soup to pan and bring to boil, turn down and simmer for about a15 minutes. Add sour cream and peas.
  5. Drain Macaroni, Put in large casserole pour beef mixture over stirring well, put in 350 oven for about 20 minutes,
