baked chicken "salad" casserole
When my daughter was very young, we joined a group called MOPS (Mothers of pre-schoolers) so she could socialize with other children, and I had some mommy time with other moms of preschoolers. We usually had food at the meetings. This was served at the first one we went to in May 99 (my daughter was born in Jan 99). This was incredibly good!

Ingredients
- 2 cups diced cooked chicken
- 3/4 cup mayo
- 1 cup diced celery
- 1 tablespoon lemon juice
- 1 can cream of chicken soup
- 1/2 cup diced onion
- 1/2 cup sliced almonds
- 3 - hard boiled eggs, peeled and chopped
- 1 cup grated cheese
- 1 cup crushed potato chips
How To Make baked chicken "salad" casserole

Step 1Combine all but cheese and chips. Blend and place in oblong baking dish. Sprinkle with cheese and chips. Bake 30 min at 400 degrees. Let stand 15 min before serving.
