This new casserole recipe I created was inspired by Taco Bell's discontinued burrito in 1995, the Bacon Cheeseburger Burrito. It looks like taco lasagna and tastes like a bacon cheeseburger.

    ground chuck
  • 1 md
    tomato, seeded and chopped
  • 2 Tbsp
    steak seasoning
  • 1 Tbsp
    ranch seasoning
  • 8
    raw applewood bacon strips
  • 1 Tbsp
    olive oil
  • 1 md
    red onion, diced
  • 2
    banana peppers, sliced
  • 2
    taco seasoning packets, divided
  • 1 Tbsp
    sea salt mixed with black pepper
  • 1 c
    heavy cream
  • 1 c
    half and half
  • 8 oz
    processed American cheese, cubed
  • 9
    flour tortillas
  • 8 oz
    sharp cheddar cheese, shredded

How To Make bacon cheeseburger burrito casserole

    Heat a large skillet over medium-high heat. Add ground chuck; cook 5 to 7 minutes or until crumbled and no longer pink. Drain excess fat.

    Reduce to low heat, add chopped tomatoes, steak seasoning and ranch seasoning, stir for 2 minutes until combined. Remove from heat and set aside.

    Preheat oven to 375 degrees F. Coat a 13x9-inch glass baking dish with cooking spray.

    Heat a medium saucepan over medium heat. Add bacon strips and fry for 3 minutes per side until cooked through.

    Remove the bacon to a plate lined with paper towels, crumbled up and set aside. Reserve bacon drippings to 1/2 cup.

    Heat olive oil in a same saucepan. Add diced red onion, sliced banana peppers and crumbled bacon; saute for 5 minutes until tender. Season with 1 packet taco seasoning and sea salt/black pepper. Remove from heat. Transfer to a large bowl.

    Heat reserved bacon drippings in a same saucepan over medium heat. Add heavy cream, half and half, cubed American cheese and remaining taco seasoning, stirring constantly for 4 minutes until mixture is simmering, thick and smooth. Remove from heat.

    Place 3 flour tortillas into the prepared baking dish. Spread 1/2 of the cheese sauce on top of the tortillas. Spoon 1/2 of the meat mixture evenly over the cheese sauce.

    Add 1/2 of the bacon mixture. Top with 1/2 cup sharp cheddar cheese. Repeat layers.

    Bake in the preheated oven for 35 to 40 minutes or until the cheeses are melted.
