Ingredients

  • 2 tablespoons tahini paste
  • 2 tablespoons lemon juice
  • 2 tablespoons greek yogurt
  • 2 tablespoons water
  • 4 - garlic clove crushed (divided)
  • 1/2 pound minced turkey
  • 1 - grated zucchini
  • 3 - spring onions
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne or allepo pepper
  • 2 tablespoons vegetable oil

How To Make turkey koftas with tahini yoghurt sauce

  • Step 1
    Make the sauce first In a small bowl mix two tablespoons of Tahini paste with the juice of one lemon (It will start to thicken).
  • Step 2
    Mix in two tablespoons of water.
  • Step 3
    Mix in two tablespoons of greek yoghurt.
  • Step 4
    Add more water if needed to get a thick but runny consistency.
  • Step 5
    Add a crushed garlic clove.
  • Step 6
    Salt to taste and set aside.

    The koftas 1. Grate the zucchini.
  • Step 8
    In a bowl, mix the minced turkey meat, grated zucchini and all the dry ingredients.

    Shape mixture into 2 inch diameter patties.

    Heat up a pan with two tablespoons of vegetable oil on medium heat and sear burgers in batches for about 3 min each side until golden brown.
  • Step 11
    Plate, garnish with cilantro and serve with sauce on the side.
