Ingredients
- 2 tablespoons tahini paste
- 2 tablespoons lemon juice
- 2 tablespoons greek yogurt
- 2 tablespoons water
- 4 - garlic clove crushed (divided)
- 1/2 pound minced turkey
- 1 - grated zucchini
- 3 - spring onions
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne or allepo pepper
- 2 tablespoons vegetable oil
How To Make turkey koftas with tahini yoghurt sauce

Step 1Make the sauce first In a small bowl mix two tablespoons of Tahini paste with the juice of one lemon (It will start to thicken).

Step 2Mix in two tablespoons of water.

Step 3Mix in two tablespoons of greek yoghurt.

Step 4Add more water if needed to get a thick but runny consistency.

Step 5Add a crushed garlic clove.

Step 6Salt to taste and set aside.

Step 7The koftas 1. Grate the zucchini.

Step 8In a bowl, mix the minced turkey meat, grated zucchini and all the dry ingredients.

Step 9Shape mixture into 2 inch diameter patties.

Step 10Heat up a pan with two tablespoons of vegetable oil on medium heat and sear burgers in batches for about 3 min each side until golden brown.

Step 11Plate, garnish with cilantro and serve with sauce on the side.
