Ingredients

  • 2 Tbsp
    tahini paste
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    greek yogurt
  • 2 Tbsp
    water
  • 4
    garlic clove crushed (divided)
  • 1/2 lb
    minced turkey
  • 1
    grated zucchini
  • 3
    spring onions
  • 2 Tbsp
    chopped fresh mint
  • 2 Tbsp
    chopped cilantro
  • 1 tsp
    ground cumin
  • 1/2 tsp
    cayenne or allepo pepper
  • 2 Tbsp
    vegetable oil

How to Make Turkey Koftas With Tahini Yoghurt Sauce

Step-by-Step

  1. Make the sauce first

    In a small bowl mix two tablespoons of Tahini paste with the juice of one lemon (It will start to thicken).
  2. Mix in two tablespoons of water.
  3. Mix in two tablespoons of greek yoghurt.
  4. Add more water if needed to get a thick but runny consistency.
  5. Add a crushed garlic clove.
  6. Salt to taste and set aside.
  7. The koftas

    1. Grate the zucchini.
  8. In a bowl, mix the minced turkey meat, grated zucchini and all the dry ingredients.
  9. Shape mixture into 2 inch diameter patties.
  10. Heat up a pan with two tablespoons of vegetable oil on medium heat and sear burgers in batches for about 3 min each side until golden brown.
  11. Plate, garnish with cilantro and serve with sauce on the side.
