As a member of a family and friends cooking team, Pirates of the Grillibbean, we work hard to create the best burgers possible while also giving back to our community. Each year we participate in a fund raising event for local animal shelters. We also use our local firefighters as taste testers. We hope you enjoy the Pirate's Pride Burger.

Ingredients
- PIRATE'S PRIDE BURGER
- 2 pounds 85/15 ground chuck
- 1 pound 90/10 angus ground beef
- 1 teaspoon worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 stick butter, melted
- BACON WEAVE
- 24 ounces package, smoked bacon
- 1 pound box, dark brown sugar
- 1 tablespoon red pepper flakes
- KAREN'S PIMENTO CHEESE
- 8 ounces block extra sharp cheddar cheese
- 8 ounces block pepper jack cheese
- 8 ounces block monterey jack cheese
- 4 ounces cream cheese
- 1/2 cup mayonnaise
- 3 tablespoons pimento peppers with juice
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 teaspoons mrs. dash, original
- 1/2 teaspoon red pepper or hot sauce
- TOPPINGS
- 1 jar steak sauce
- 1 jar mayonnaise
- - bibb lettuce leaves
- - tomato slices
- - red onion, sliced thin
- 1 jar dill pickles, sandwich slims
How To Make pirate's pride burger

Step 1Bacon Weave Preheat oven to 425 degrees. Foil line 2 large cookie sheets and add 2 metal cooling racks to the cookie sheets. Use zip lock bag and add box of dark brown sugar, set aside.

Step 2Take 3 slices of bacon and cut in half, you now have 6 small sections of bacon to work with. Put the small bacon sections in the brown sugar bag and coat bacon very well.

Step 3Take the 3 slices of bacon and run them horizontal on the metal cooling racks, then take 3 more slices of sugar coated bacon and weave vertically with the horizontal strips. You are basically building a woven bacon blanket. This may sound complicated but after you complete the first the rest are a breeze. Continue with bacon repeating the same steps until you have 6 bacon weaves. Sprinkle each bacon weave with red pepper flakes before baking.

Step 4Bake in oven for 30 minutes or until bacon is done. While bacon is baking move on to pimento cheese recipe. Note for time saving: Make bacon weave and pimento cheese the day before and store in refrigerator. Warm bacon in microwave before serving on burgers.

Step 5Karen's Pimento Cheese Using food processor shredded the three 8 oz. packages of block cheeses. Set aside.

Step 6In large mixing bowl add mayo, cream cheese, pimentos and spices. With electric hand mixer blend together until smooth. Add the shredded cheeses to the mayo mixture and mix well. Refrigerate until ready to put on burgers.

Step 7Pirate's Pride Burgers Fire up grill to at least 325 degrees. In large mixing bowl combine the 3 pounds of ground beef, Worcestershire sauce, salt and pepper. Form 6 burgers into large 7 oz burger patties.

Step 8Place burgers on grill. Cook on one side 10 to 12 minutes, before turning baste with melted butter. Turn burgers and cook until medium to medium well or at least 160F internal temperature.

Step 9Just before taking burgers off grill add large dollop of pimento cheese mixture and let melt. Remove burgers and serve on buttered toasted buns.

Step 10Assemble burger as bottom bun, lettuce, onion, burger, bacon weave, steak sauce, tomato, and sliced dill pickles. Add mayo or steak sauce to bun top. Serves 6.
