linnie's fiesta burgers
This is one of my husband's favorite dishes and I've been making this for about 45 years. I usually use a creamy chees like Velveeta but a white Mexican cheese would be good, too. It makes for a great sauce! If you don't like green peppers you can also use a can of mild green chilies. I usually serve this with Mexican or Spanish rice and buttered corn niblets. Ingredients
- 1 1/2 pounds fresh ground beef
- 2 - eggs beaten
- 1/2 - finely chopped onion
- 1 package crushed ritz crackers
- 1/4 cup each of ketchup & brown sugar
- 2 teaspoons worcestershire sauce
- 1/2 cup diced greep pepper
- 1 cup shredded cheese
- 2 cans cream of mushroom soup
- can pinto beans or kidney beans
- 1/4 teaspoon salt and pepper

Step 1Prepare the hamburger patties by mixing together the eggs, crushed crackers, ketchup, Worcestershire sauce, onions, brown sugar, salt and pepper. Make six patties. Brown the meat in a skillet over medium heat and check the bottoms often because they can burn easily since they contain brown sugar and ketchup.

Step 2After they are browned on both sides, pour the mushroom soup over the burgers. Make sure the soup gets underneath the patties. Then sprinkle the pinto beans and green pepper over the top. Cover with a lid and let them simmer for about ten minutes over low heat.

Step 3Sprinkle grated cheese over the top, cover it again and let it cook over low heat another five minutes until the cheese is melted. Then serve it up!
