lamb burgers with cheesy herb mayo

Nothing better to top a lamb burger with than blue cheese... except topping it with a blue cheese and basil mayo! Be sure to use a really good quality blue cheese - it really makes a difference. These nicely spiced burgers would be great all alone, but the topping and grilled onion slices takes them to another level!

Ingredients For lamb burgers with cheesy herb mayo

  • BURGERS:
  • 1 1/4 lb
    ground lamb
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1/2 tsp
    smoked paprika
  • 1
    red onion
  • 3/4 tsp
    salt (to taste)
  • 3/4 tsp
    freshly ground black pepper (to taste)
  • 4
    hamburger buns
  • FOR THE MAYO
  • 2 oz
    crumbled blue cheese, good quality is important (about 1/2 cup)
  • 1/3 c
    fresh basil, coarsely chopped
  • 1/4 c
    mayonnaise (hellmans or best foods)
  • 2 tsp
    dijon mustard
  • salt & pepper to taste

How To Make lamb burgers with cheesy herb mayo

    In a large bowl, gently combine the lamb with the garlic powder, onion powder, paprika, 3/4 tsp. salt (to taste), and 3/4 tsp. pepper (to taste). Form into 4 patties about 5-1/2 inches wide. Put on a plate, cover with wrap, and refrigerate for 15 minutes.

    Meanwhile, prepare the mayo. In a small bowl, combine all the ingredients. Season to taste with salt and pepper. Set aside.

    Cut four thick slices of red onion, each about 3/8 inches thick. Place on the grill about 3 minutes before placing burgers on the grill. Grill the burgers and onion slices, flipping only once, until the burgers are cooked to your liking (preferably rare!) and the onions are tender. This will take about 4-5 minutes for the burgers, and about 8-9 minutes for the onions (this is why you placed the onions on the grill ahead of the burgers). Remove cooked burgers and onions to a plate.

    Lightly toast the buns on the grill. Place a patty on each bun, top with a grilled onion slice, followed by 1/4 of the blue cheese mayo. Enjoy!
