This is one of my kids' favorite burger recipes. I try to make them at least once each summer, when weather is ideal for outdoor grilling. But these Chicken Burgers can be grilled indoors using a good quality pan grill. When I grill them indoors, I sometimes swirl a tiny dash of liquid smoke around the grill pan while it preheats. (I have to be careful with that though, because a little goes a long way and it can be overwhelming if I use too much Liquid Smoke). Sweet onions are best for these burgers, so the natural sugars melt during grilling and nearly caramelize the onions.

Ingredients For grilled hawaiian chicken burgers

  • oil - for grill grates
  • 1 lb
    lean ground chicken
  • 1/4 cup
    chopped vidalia onion (or other sweet onion, such as walla walla)
  • 4 slice
    vidalia onion (each 1/4-inch thick) - do not separate into rings
  • 1/2 tsp
    salt
  • 1/4 tsp
    white pepper
  • 1/4 cup
    crushed pineapple, drained - reserve 2 tbsp pineapple juice
  • 1/2 cup
    plain barbecue sauce
  • 1 small clove
    garlic, minced
  • 4 slice
    provolone cheese
  • 4 lg
    hambruger buns
  • 4 slice
    bacon, cooked crisp

How To Make grilled hawaiian chicken burgers

    Prepare grill for medium-high heat. Spray grill grates with oil.

    Mix 1/4 cup BBQ sauce with the 2 Tbsp reserved pineapple juice. Set aside.

    In a large mixing bowl, combine ground chicken, chopped onion, salt, pepper, drained pineapple, garlic, and remaining 1/4 cup BBQ sauce until well mixed. Form chicken mixture into 4 patties.

    Place onion slices on grill so they're not directly over heat. Grill about 10 minutes. Place patties directly over the heat of hot grill, and cook 6 to 8 minutes.

    Carefully and gently (without separating into rings), flip the onion slices and grill other side for about 4 minutes longer. Flip the chicken patties, and cook 4 to 6 minutes on second side. (Center should be fully cooked, and internal temperature should reach 165°F.)

    Baste the chicken patties and onion slices with the BBQ/Pineapple juice mixture.

    If you prefer toasted buns, place buns on grill and let toast about 30 to 60 seconds or as desired.

    Place 1 slice of Provolone on each cooked chicken patty.

    TO ASSEMBLE THE BURGERS: Place a grilled chicken patty on each bottom bun. Top each patty with grilled onions and a bacon slice. Dress with additional burger toppings of your choice (such as lettuce, pickles, etc.). Add top bun, and serve immediately.
