Ingredients
- 1 pound boneless skinless thighs
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup diced red or yellow pepper finely diced
- 1/2 cup onion finely diced
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon red pepper flakes
- 3 cloves garlic minced
- 1/4 cup ritz crackers crushed
- 1/4 cup seasoned bread crumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon salt
- 1/4 cup mayonnaise
- 2 tablespoons fresh parsley finely chopped
- 1 large egg
- 1 teaspoon dijon mustard
- 4 slices cheese your favorite
- 4 buns
- 1/2 cup shredded carrots
- 1/4 cup white vinegar
- mayonnaise for serving
How To Make chicken burgers with pickled carrots

Step 1Cut the thighs into strips and place in food processor. Process until they are pea size pieces. Divide mixture in half.

Step 2Melt 1 tbsp butter in frying pan and add the peppers, onions, red pepper flakes and poultry seasoning. Cook until softened then add the garlic and cook 30 seconds.

Step 3Add half the ground chicken and cook until done. Set aside and cool completely.

Step 4Meanwhile mix the carrots and white vinegar and set aside.

Step 5In a large bowl add the cracker crumbs, bread crumbs, Parmesan, mayonnaise, parsley, salt, egg, and mustard. Add in the raw chicken and the cooked chicken mixture. Mix well, If the mixture is to wet add a little more cracker crumbs.

Step 6Shape into 4 patties and place in fridge to let them firm up about 30 minutes.

Step 7Place butter and oil in frying pan. Add the patties and brown on both sides flipping often. Use a probe thermometer to make sure they are at least 150 degrees

Step 8Add a slice of cheese to each patty and place the lid over the patties until cheese melts.

Step 9Drain the carrots and pat dry. Add the chicken burger to the bottom buns. Spread some mayonnaise on the top bun and add the pickled carrots.
