Ingredients

  • ROASTED RED PEPPER KETCHUP
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 6 cloves garlic, minced
  • 2 cups crushed tomatoes
  • 2 large red bell pepper
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • 2 sprigs thyme
  • 2 teaspoons balsamic vinegar
  • 1 - salt and pepper, to taste
  • BURGER TACOS
  • 1 pound ground beef
  • 0 - salt and pepper
  • 6 medium 8 inch flour tortillas
  • 6 slices provolone cheese
  • 1 cup shredded lettuce
  • 18 medium dill pickle slices

How To Make burger tacos with roasted red pepper ketchup

  • Step 1
    For the ketchup, heat the broiler to high. Position a rack about 10 inches from the broiler. Place the red peppers on a baking sheet and place in the oven, and roast until the skin is black and bubbly.
  • Step 2
    Place them in a paper bag and close the bag. Let sit until cooled, then peel the black skin off and discard the skin and seeds. Set aside.
  • Step 3
    In a skillet over medium-low heat, add the oil. Add the onions and garlic and cook for about 5 minutes.
  • Step 4
    Add the remaining ingredients and bring to a boil. Reduce the heat to low and simmer 1 hour.
  • Step 5
    Remove from the heat and press through a fine mesh strainer. Discard the solids. Place in the refrigerator until cold and ready to use.
  • Step 6
    On a griddle or large flat-bottom pan, get the pan hot. Mix the ground beef with the salt and pepper. Roll the hamburger into 6 balls.
  • Step 7
    Place a ball on the griddle and smash flat with the back of a spatula. Place a second ball and smash it the same. Once crispy brown on one side, flip the burgers and top with a tortilla.
  • Step 8
    Once the burger is cooked, flip it again so the tortilla is getting browned.
  • Step 9
    Add a slice of cheese to the top of each and then fold in half. Remove from the griddle and repeat until they are all cooked.
  • Step 10
    Squeeze in the roasted red bell pepper ketchup and top with lettuce and pickles. You can top it with any topping you like.
