Ingredients
- ROASTED RED PEPPER KETCHUP
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 6 cloves garlic, minced
- 2 cups crushed tomatoes
- 2 large red bell pepper
- 1/2 teaspoon smoked paprika
- 1 bay leaf
- 2 sprigs thyme
- 2 teaspoons balsamic vinegar
- 1 - salt and pepper, to taste
- BURGER TACOS
- 1 pound ground beef
- 0 - salt and pepper
- 6 medium 8 inch flour tortillas
- 6 slices provolone cheese
- 1 cup shredded lettuce
- 18 medium dill pickle slices
How To Make burger tacos with roasted red pepper ketchup

Step 1For the ketchup, heat the broiler to high. Position a rack about 10 inches from the broiler. Place the red peppers on a baking sheet and place in the oven, and roast until the skin is black and bubbly.

Step 2Place them in a paper bag and close the bag. Let sit until cooled, then peel the black skin off and discard the skin and seeds. Set aside.

Step 3In a skillet over medium-low heat, add the oil. Add the onions and garlic and cook for about 5 minutes.

Step 4Add the remaining ingredients and bring to a boil. Reduce the heat to low and simmer 1 hour.

Step 5Remove from the heat and press through a fine mesh strainer. Discard the solids. Place in the refrigerator until cold and ready to use.

Step 6On a griddle or large flat-bottom pan, get the pan hot. Mix the ground beef with the salt and pepper. Roll the hamburger into 6 balls.

Step 7Place a ball on the griddle and smash flat with the back of a spatula. Place a second ball and smash it the same. Once crispy brown on one side, flip the burgers and top with a tortilla.

Step 8Once the burger is cooked, flip it again so the tortilla is getting browned.

Step 9Add a slice of cheese to the top of each and then fold in half. Remove from the griddle and repeat until they are all cooked.

Step 10Squeeze in the roasted red bell pepper ketchup and top with lettuce and pickles. You can top it with any topping you like.
