buffalo-style turkey burgers

Inspired by a burger mentioned on a talk show, I came up with this to suit my family's tastes. Of course, you can adjust amounts of hot sauce and cayenne to your own taste. Also, you can cook them in a pan if grilling isn't your thing.

Ingredients
- 1 pound ground turkey
- 1/4 cup onion, minced
- 2 cloves garlic, minced or grated
- 2 teaspoons hot sauce
- 1/2 teaspoon dried thyme
- 1 teaspoon kosher salt, or to taste
- 1 teaspoon black pepper, or to taste
- 1/2 teaspoon red pepper flakes, or to taste
- CELERY - BLUE CHEESE RELISH
- 3 stalks celery, thinly sliced
- 1/3 cup red onions, thinly sliced
- 2 tablespoons parsley, chopped
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon lemon zest
- 1/4 cup blue cheese crumbles
- - salt and pepper to taste
- SPICY SAUCE
- 1/2 cup mayonnaise, light
- 2 teaspoons lemon juice
- 2 teaspoons hot sauce
- 1 1/2 teaspoons honey or agave
- 1/4 teaspoon cayenne, or more, to taste
How To Make buffalo-style turkey burgers

Step 1BURGER: Fold onions, garlic, hot sauce, thyme, black pepper, and chile flakes into ground turkey. Gently form 4 patties.

Step 2Grill burgers on medium heat, 5-7 minutes per side. Lightly butter cut sides of buns and place on the grill for a couple minutes.

Step 3RELISH: Combine ingredients in a small bowl. Either place on top of burger or use as a side.

Step 4SAUCE: Mix all of the ingredients together. Spread on toasted burger bun.
