buffalo-style turkey burgers

Inspired by a burger mentioned on a talk show, I came up with this to suit my family's tastes. Of course, you can adjust amounts of hot sauce and cayenne to your own taste. Also, you can cook them in a pan if grilling isn't your thing.

Ingredients

  • 1 pound ground turkey
  • 1/4 cup onion, minced
  • 2 cloves garlic, minced or grated
  • 2 teaspoons hot sauce
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt, or to taste
  • 1 teaspoon black pepper, or to taste
  • 1/2 teaspoon red pepper flakes, or to taste
  • CELERY - BLUE CHEESE RELISH
  • 3 stalks celery, thinly sliced
  • 1/3 cup red onions, thinly sliced
  • 2 tablespoons parsley, chopped
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon lemon zest
  • 1/4 cup blue cheese crumbles
  • - salt and pepper to taste
  • SPICY SAUCE
  • 1/2 cup mayonnaise, light
  • 2 teaspoons lemon juice
  • 2 teaspoons hot sauce
  • 1 1/2 teaspoons honey or agave
  • 1/4 teaspoon cayenne, or more, to taste

How To Make buffalo-style turkey burgers

  • Step 1
    BURGER: Fold onions, garlic, hot sauce, thyme, black pepper, and chile flakes into ground turkey. Gently form 4 patties.
  • Step 2
    Grill burgers on medium heat, 5-7 minutes per side. Lightly butter cut sides of buns and place on the grill for a couple minutes.
  • Step 3
    RELISH: Combine ingredients in a small bowl. Either place on top of burger or use as a side.
  • Step 4
    SAUCE: Mix all of the ingredients together. Spread on toasted burger bun.
