bison burgers with bourbon onion jam

Ingredients
- BURGERS
- 2 pounds ground bison
- 1/2 cup panko breadcrumbs (1/4 cup finely ground)
- 1 large free-range egg, beaten
- 1 tablespoon sweet & spicy German mustard (substitute Dijon or stone-ground mustard)
- ground Himalayan pink salt, to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 4 hamburger buns
- 4 slices cheese
- 4 lettuce leaves (such as boston)
- 4 slices beefsteak tomato
- BOURBON ONION JAM
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cups yellow onions, finely sliced (lyonnaise cut)
- 1/2 teaspoon ground Himalayan pink salt, or more to taste
- 1/2 teaspoon freshly ground black pepper, or more to taste (I always use mixed peppercorns)
- 1 large clove garlic, pressed
- 1/3 cup bourbon
How To Make bison burgers with bourbon onion jam

Step 1To make the burgers, add the bison, panko, egg, mustard, salt and pepper to a large bowl. Mix (don’t overdo it) and evenly divide into 4 portions.

Step 2Form 4 patties and place them on a plate. Cover with plastic wrap and transfer to the fridge for at least 2 hours and up to 8.

Step 3When ready to cook, remove the patties from the fridge and allow them to get to room temperature, about 30 minutes.

Step 4Meanwhile, in a large saucepan over medium-high heat, melt the butter and add the oil.

Step 5Once hot, add onion slices, salt, and pepper; sauté for 2 minutes. Cover, reduce heat to medium and cook for 8 minutes, stirring frequently making sure the onion slices are well coated.

Step 6Add garlic and sauté for 1 minute.

Step 7Reduce to medium-low and continue cooking for another 10 minutes, uncovered, stirring often.

Step 8Pour in bourbon, bring the heat to medium and cook about 10 minutes or until the liquid is almost evaporated, stirring every 2 minutes.

Step 9Taste and adjust seasoning and keep it warm until needed.

Step 10Preheat grill to 450ºF and oil grates.

Step 11Place patties, close the lid and grill for 5 to 6 minutes per side or until internal temperature reaches 135ºF to 140ºF.

Step 12About 3 minutes before they’re done, place hamburger buns, close the lid and grill them for 2 minutes.

Step 13Top patties with a slice of cheese, close the lid and cook until the cheese is melted and the buns are nicely toasted.

Step 14To assemble... Place lettuce on the bottom bun followed by the patty and then the bourbon onion jam on top before placing a tomato slice. Serve immediately…
