Who doesn't like pizza, and zucchini is delicious. Give this a try while zuiccini is still fresh from the garden. This is really a complete meal with cheese, veggies and meat. Cook up a loaf of warm home made bread and yummy, a great meal. Thank you tasteofhome!

Ingredients
- 4 cups shredded, unpeeled zucchini
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup grated parmesan cheese
- 8 ounces shredded part-skim mozzarella cheese, divided
- 4 ounces shredded cheddar cheese, divided
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 can italian tomato sauce
- 1 medium green pepper, chopped
How To Make zucchini pizza casserole

Step 1Place zucchini in strainer; sprinkle with salt. Let stand for 10 minutes. Squeeze out moisture. (You don't have to add the salt if you are watching how much you eat. The cheese will be salty enough.)

Step 2Combine the zucchini with the eggs, parmesan and half of the mozarella and cheddar cheeses. Press into lightly greased 13 in. x 9 in. baking dish.

Step 3Bake, uncovered, at 400 for 20 minutes. Meanwhile, cook beef and onion over medium heat until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture.

Step 4Sprinkle with remaining cheeses; add green pepper. Bake 20 minutes longer or until heated through. Yield 6-8 servings.
