zucchini casserole
My uncle was an avid gardner and use to make this when we went to camp at the end of the summer.

Ingredients
- 2 medium zucchini (do not want them tough)
- 6 - tomatoes fresh
- 6 - green peppers
- 6 - onions
- 2 pounds ground beef
- 1 tablespoon garlic powder
- 1 tablespoon oregano, dried
- 1 tablespoon basil
- 3 cups mozzarella cheese, low-fat
- 1 - container of your favorite mushrooms (i use button mushrooms)
How To Make zucchini casserole

Step 1Preheat oven to 350 degrees. Peel and slice zucchini either long ways or in medallions. Set aside. Brown hamburg as if your making chili or a sauce.

Step 2slice tomatoes, clean and slice peppers into strips, clean and slice mushrooms, peel onions and slice them into rings. Add mushrooms tomatoes peppers and onions into a bowl and sprinkle the garlic powder, oregano and basil over the veggies and toss so that the veggies are covered.

Step 3Layer the zucchini in a 9x12 pan so that you can make two layers...layer 1/2 of the veggies on top of the zucchini and then 1/2 of the meat on top of the veggies. 1/2 the cheese on top of the meat. Another layer of zucchini and the whole process over again ending with the cheese

Step 4Bake until vegetable are tender about 45 minutes. Cheese will be bubbly and brown. Let sit for 15 minutes before serving.
