Ingredients

  • 1 lb
    boneless sirloin steak
  • 2 Tbsp
    olive oil
  • 1 lb
    fresh asparagus, cut into 2-inch pieces
  • 1 medium
    onion, chopped
  • 1/2 c
    beef broth
  • 4 c
    cooked farfelle pasta (bow ties)
  • 1 can(s)
    (15 oz.) tomato sauce (i buy diced tomatoes and blend them up)
  • 3 Tbsp
    fresh, lightly chopped basil leaves
  • 3 Tbsp
    coarsly chopped sundried tomatoes
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 c
    grated, fresh parmesan

How to Make Zesty Beef with Bow Ties

Step-by-Step

  1. Trim fat from sirloin. Cut beef across the grain into bite size cubes.
  2. Heat olive oil over medium heat. Saute onions until fragrant and crisp-tender.
  3. Add remaining olive oil to skillet. Add sirloin. Cook over medium heat, stirring frequently until meat is no longer pink.
  4. Return onions. Stir in remaining 1 cup of beef broth and crushed tomatoes. Simmer 10 minutes.
  5. Stir in cooked pasta.
  6. Plate, sprinkle with fresh basil, sun dried tomatoes, and Parmesan cheese. Serve.
