Ingredients

  • 1 pound boneless sirloin steak
  • 2 tablespoons olive oil
  • 1 pound fresh asparagus, cut into 2-inch pieces
  • 1 medium onion, chopped
  • 1/2 cup beef broth
  • 4 cups cooked farfelle pasta (bow ties)
  • 1 can (15 oz.) tomato sauce (i buy diced tomatoes and blend them up)
  • 3 tablespoons fresh, lightly chopped basil leaves
  • 3 tablespoons coarsly chopped sundried tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup grated, fresh parmesan

How To Make zesty beef with bow ties

  • Step 1
    Trim fat from sirloin. Cut beef across the grain into bite size cubes.
  • Step 2
    Heat olive oil over medium heat. Saute onions until fragrant and crisp-tender.
  • Step 3
    Add remaining olive oil to skillet. Add sirloin. Cook over medium heat, stirring frequently until meat is no longer pink.
  • Step 4
    Return onions. Stir in remaining 1 cup of beef broth and crushed tomatoes. Simmer 10 minutes.
  • Step 5
    Stir in cooked pasta.
  • Step 6
    Plate, sprinkle with fresh basil, sun dried tomatoes, and Parmesan cheese. Serve.
