yvonne's cheeseburger pie
My mother was quite the cook! My father & I loved her creativity in the kitchen! Mom was fighting breast cancer ('68-'77), and was able to make some incredible meals, even if she wasn't feeling well! After she passed away, I found her old, tin, "Family Circle" Recipe Box, and found this favorite of my childhood.

Ingredients
- 1 pound ground beef
- 1.5 cups chopped onion
- - salt
- - pepper
- 1.5 cups milk
- 3/4 cup biscuit mix
- 3 - eggs
- 1 - tomato, sliced
- 1 cup cheddar cheese, shredded
How To Make yvonne's cheeseburger pie

Step 1Heat oven to 400 degrees.

Step 2Grease pie plate.

Step 3Brown beef and onion; drain well. (I rinse my ground beef in a collander--reduces the fat content of the dish.)

Step 4Stir in salt and pepper.

Step 5Spread in plate.

Step 6Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater.

Step 7Pour into place.

Step 8Bake 25 minutes.

Step 9Top with tomatoes; sprinkle with cheese.

Step 10Bake until knife inserted in center comes out clean 5-8 minutes.

Step 11Cool 5 minutes prior to serving.

Step 12*My add-ons to mom's recipe: To add a "Texas" kick, add a litte chili powder, OR some chopped jalepenos. You can also top it off with a dollop of Sour Cream (I prefer "Daisy") & some Pico de Gallo. Or add some cooked, crumbled Bacon to the beef mixture~!
