Ingredients

  • 1 beef bottom round roast
  • 3-4 cups beef stock
  • 1/2 bag baby carrots
  • 1 onion chopped
  • 1 bunch celery chopped
  • 1 package onion soup mix
  • salt and pepper

How To Make week long dinner

  • Step 1
    place veggies in bottom of crock pot. remove ties from roast and coat with dry onion soup mix. Add salt and pepper to your liking. I suggest 1 tsp each. place in crock pot. Add beef stock-does not need to cover meat. cook on low heat with lid on for 6 hours.
  • Step 2
    Remove meat and slice to serve but reserve some meat for beef barley soup. Take 1/12 cups of broth 1st day -from crock pot and mix a few spoonfuls of sour cream, a few drops of A1 sauce and then thicken with wondra flour. Serve meat with gravy and any side dishes you like.
  • Step 3
    2nd day-additional idea-serve meat with gravy on buns.
  • Step 4
    3rd day-beef barley soup. use reserved beef and cut into very small chips. place stock and leftover veggies and beef in a large stock pot. Add to small cans of Campbells golden mushroom soup with 2 cans of water. Add 1 cup dry hulled and rinsed barley and 3 cups of water. Add the other 1/2 bag of baby carrots. for spices I used salt and pepper, garlic salt and a beef rub spice. be sure its not to hot for you! bring to boil and simmer 45 min. add frozen corn, peas and i can diced tomatoes. bring to a boil again and then turn off stove and allow to cool slightly. serve topped with French fried onions enjoy! makes 6-8 quarts.
