minestrone
(1 RATING)
There is a restaurant in nearby Southeastern Massachusetts that has this wonderful soup. They are famous for it. The name of the restaurant is Venus De Milo. I hope you enjoy as much as we do.

Ingredients
- 1 pound ground beef

- 1 quart water
- 1 package lipton onion soup mix
- 2 - stalks of celery-chopped
- 14 1/2 ounces can stewed tomatoes (chopped up)
- 1 package frozen mixed vegetables (corn, green beans, peas)
- 1/2 cup orzo macaroni (see note)
- 1 tablespoon worcestershire sauce (optional)
How To Make minestrone
-
Step 1Brown ground beef with salt and pepper to taste. Drain. Add brother, water, onion soup and celery. Boil for 20 minutes. Add tomoatoes, vegetables and orzo. (see note below re: orzo).
-
Step 2Boil for 15 minutes. Add worcestershire sauce (optional). May also sprinkle with parmesan cheese on top in individual serving bowls.
-
Step 3NOTE: orzo - may also be cooked separately - I prefer to cook it separately and spoon desired amount in individual serving bowl. This way the orzo does not absorb all the broth.
