Upside Down Shepherd's Pie

Susan Baker

This comforting casserole is made even easier by placing potato slices on the bottom. This is a very forgiving recipe, so feel free to adjust the veggies, soup mix, cheese and steak sauce to suit your family's preferences.

onion chopped
2 Tbsp
all purpose flour
1 Tbsp
beef or french onion soup mix
1 c
1/2 c
frozen peas

How to Make Upside Down Shepherd's Pie

  • 1Wash and sice potatoes medium thick. No need to peel them. Place in bottom of a 2 quart casserole.
  • 2Brown the ground beef in frying pan. Add in the onions and stir fry until soft. Sprinkle with flour and dry soup mix and stir fry 2 minutes over medium heat. Add steak sauce and water and stir until bubbly.
  • 3Add the veggies and mix into the beef mixture.
  • 4Pour meat mixture over the potatoes (salt & pepper the potatoes before this step). Top with grated cheese of your choice. I use Cheddar.
  • 5Bake covered at 350 for about an hour, or until potatoes are tender when stuck with the tip of a knife.
