This is my brother-in-law's recipe...tried and true! Great for "game" night or any time in-between! Thanks...Andy!

Ingredients

  • 1 1/2 - 2 pounds ground beef
  • 1 - 2 - medium onions, chopped
  • 1 - 2 - garlic cloved, crushed
  • 1 can pinto beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 - green bell pepper, chopped
  • 4 - whole jalapena peppers
  • 4 - whole skinny hot peppers
  • 2 cans tomato sauce, 15 ounces each
  • - cumin
  • - tortillas, warmed
  • FILLERS AND/OR TOPPINGS
  • - cheddar cheese, shredded
  • - guacamole and/or avocado slices
  • - sour cream
  • - salsa and/or diced tomatoes
  • - shredded lettuce
  • - hot sauce

How To Make uncle andy's burritos

  • Step 1
    Brown together beef, onions, and garlic cloves. Drain.
  • Step 2
    Meanwhile, drain and rinse the pinto and kidney beans. Combine in large sauce pan, the meat mixture, drained beans, all of the peppers and the tomato sauce. Cover the top with a good amount of cumin.
  • Step 3
    Simmer for a couple of hours. During cooking time, pierce the peppers once they become tender.
  • Step 4
    Before serving, remove the whole Jalapena and hot peppers. Cut them up into pieces and offer as filling/topping. Serve on warm tortillas with cheddar cheese and other fillings/toppings.
