Ingredients For uncle andy's burritos

  • 1 1/2 - 2 lb
    ground beef
  • 1 - 2
    medium onions, chopped
  • 1 - 2
    garlic cloved, crushed
  • 1 can
    pinto beans, drained and rinsed
  • 1 can
    kidney beans, drained and rinsed
  • 1
    green bell pepper, chopped
  • 4
    whole jalapena peppers
  • 4
    whole skinny hot peppers
  • 2 can
    tomato sauce, 15 ounces each
  • cumin
  • tortillas, warmed
  • FILLERS AND/OR TOPPINGS
  • cheddar cheese, shredded
  • guacamole and/or avocado slices
  • sour cream
  • salsa and/or diced tomatoes
  • shredded lettuce
  • hot sauce

How To Make uncle andy's burritos

    Brown together beef, onions, and garlic cloves. Drain.

    Meanwhile, drain and rinse the pinto and kidney beans. Combine in large sauce pan, the meat mixture, drained beans, all of the peppers and the tomato sauce. Cover the top with a good amount of cumin.

    Simmer for a couple of hours. During cooking time, pierce the peppers once they become tender.

    Before serving, remove the whole Jalapena and hot peppers. Cut them up into pieces and offer as filling/topping. Serve on warm tortillas with cheddar cheese and other fillings/toppings.
