Ingredients For tim's rock and roll meatloaf

  • 2 lb
    ground beef (80/20 is best but not required)
  • 1 sm
    onion chopped
  • 1 sm
    bell pepper chopped
  • 1 Tbsp
    oregano, dried
  • 2 Tbsp
    garlic powder
  • 1/2 c
  • 1/2 c
    bbq sauce ( any type)
  • 1/4 tsp
    red pepper
  • 3
  • 1 c
    italian bread crumbs
  • 1 can
    mushrooms small can optional

How To Make tim's rock and roll meatloaf

  • 1
    Mix all ingredients in large bowl. If mixture seems to wet add more bread crumbs, if to dry add more ketchup or BBQ sauce. put in loaf pans or 9x13 baking dish and bake for 1 hour or until done. When there is 20 minutes left to cook drizzle some ketchup or BBQ sauce on top and finish baking. Take out and let stand for 15 minutes before slicing.
