three cheese ground beef & potatoes

I had ground beef and potatoes that needed to be used. I looked at a dozen or so recipes, but they all had ingredients I did not possess, or my wife and/or I don't like. I did use them as guides, though. I cooked my meat in my usual way, and made the rest of it up by looking in my cupboards & fridge. Turned out very tasty. All measurements are approximate because I tend to not measure when I cook (but I do when I bake cakes, etc. :-)).

Ingredients

  • 1 1/2 pounds lean ground beef
  • 5-6 medium potatoes, shredded
  • 5 ounces onion, diced
  • 1 1/2 tablespoons minced garlic
  • 1/2 teaspoon pepper, or to taste
  • 1/2 teaspoon garlic powder
  • 1 low sodium beef bouillon (i used goya packets)
  • 2 teaspoons Worcestershire sauce
  • 1 can Golden Cream of Mushroom soup
  • 12 ounces sour cream
  • 4+ ounces grated cheddar cheese
  • 4+ ounces grated Parmesan cheese
  • 4+ ounces grated mozzarella cheese

How To Make three cheese ground beef & potatoes

  • Step 1
    In a large skillet over medium heat, crumble ground beef. Season with pepper and garlic powder. When about halfway cooked, add onions & minced garlic. Stir occasionally. When meat is fully cooked and onions are soft, stir in bouillon and Worcestershire sauce.
  • Step 2
    Preheat oven to 350F. Grease a 9"x13" baking dish.
  • Step 3
    While beef is cooking, wash and peel potatoes. Shred them and immerse in a bowl of cold water. After beef is done, drain potatoes in a colander, and shake off excess water. Return potatoes to bowl, stir in beef mixture and remaining ingredients except the mozzarella.
  • Step 4
    Pour the mixture into your greased baking dish. Sprinkle mozzarella on top. Cover and bake for 1.5 hours. Uncover and continue baking for an additional 30 minutes. Remove from oven and let it rest for 10 minutes before serving.
  • Step 5
    Note: The soup is salty enough that you shouldn't need to add any more.
