How to Make The Best & Easiest Filet Mignon!

Step-by-Step

  1. Pat down your filets with a paper towel, to soak up any extra moisture. (you don't want to steam your filets!) Pre-heat oven to 500 degrees F.
  2. Add the olive oil to a cast iron skillet and let get hot. Do not let it get too hot to where it is smoking.
While your oil is heating, crack your pepper and salt onto a plate. Mix together, and gently push the top of your filet into the salt and pepper. Continue with the other side.
  3. Sear your filets on all sides until lightly browned. Leave in skillet and place skillet in oven (center rack) for 5 (rare) to 8 (med. rare) minutes. When done, remove from oven and skillet to stop cooking.
Let rest for about 5 minutes.
