This recipe is so easy but is ABSOLUTELY the best you will find out there! Do NOT substitute your Cast iron skillet!

Ingredients

  • - beef filets, room temperature
  • - salt and pepper
  • - olive oil

How To Make the best & easiest filet mignon!

  • Step 1
    Pat down your filets with a paper towel, to soak up any extra moisture. (you don't want to steam your filets!) Pre-heat oven to 500 degrees F.
  • Step 2
    Add the olive oil to a cast iron skillet and let get hot. Do not let it get too hot to where it is smoking. While your oil is heating, crack your pepper and salt onto a plate. Mix together, and gently push the top of your filet into the salt and pepper. Continue with the other side.
  • Step 3
    Sear your filets on all sides until lightly browned. Leave in skillet and place skillet in oven (center rack) for 5 (rare) to 8 (med. rare) minutes. When done, remove from oven and skillet to stop cooking. Let rest for about 5 minutes.
