This recipe is so easy but is ABSOLUTELY the best you will find out there! Do NOT substitute your Cast iron skillet!

Ingredients

beef filets, room temperature
salt and pepper
olive oil

Step-By-Step

1Pat down your filets with a paper towel, to soak up any extra moisture. (you don't want to steam your filets!) Pre-heat oven to 500 degrees F.
2Add the olive oil to a cast iron skillet and let get hot. Do not let it get too hot to where it is smoking.
While your oil is heating, crack your pepper and salt onto a plate. Mix together, and gently push the top of your filet into the salt and pepper. Continue with the other side.
3Sear your filets on all sides until lightly browned. Leave in skillet and place skillet in oven (center rack) for 5 (rare) to 8 (med. rare) minutes. When done, remove from oven and skillet to stop cooking.
Let rest for about 5 minutes.
