I don't usually watch cooking shows. But I do watch Chow Ciaro, Chef Fabio Viviani, on Yahoo. Yesterday he made Grandma's Meatloaf. I didn't have all the ingredients he used. I had to improvise with the ingredients I had on hand. This is the recipe...and WOW it's really really good. I am not a tomato sauce or ketchup fan when it comes to meatloaf. So there is none in this recipe.

Ingredients For the best dang meatloaf i ever ate

  • 2 lb
    ground sirloin or lean chuck
  • 1 c
    finely chopped onion
  • 1/3 c
    finely chopped parsley
  • 3/4 c
    matzo meal
  • enough milk to make a soft mixture
  • 1 c
    parmesan cheese
  • 3/4 c
    sharp cheddar cheese, shredded
  • 3/4 c
    shredded monterey jack cheese
  • 2 pkg
    dry brown gravy mix
  • freshly ground pepper
  • salt to taste if you like, i didn't add any salt as the cheese is salty enough
  • butter to saute onions in

How To Make the best dang meatloaf i ever ate

    Saute chopped onion until lightly brown and carmelized. Set aside to cool.

    Add the meat, cheeses, matzo meal, egg, pepper, cooled onion, parsely and enough milk to make a soft mixture. Mix well. It should be just slightly wet.

    Place in a large loaf pan that has not been greased and bake at 350 for about 45 minutes or almost done. Make the gravy mix and half of it to the top of the meatloaf. Reserve the other half of the gravy. Return to oven and finish cooking. Serve with the other half on the gravy mix.
