This was a most favorite recipe 40 years ago...my family loved it! I just found the hand-written recipe tonight. I always doubled the ingredients because my family loved it so much. If you double it, you will need a large pot to cook this in. I always used a black iron dutch oven (pot). It will serve 8 - 10.

  • 2 1/2 lb
    beef top round steak, boneless
  • 1/4 c
  • 1 tsp
    thyme, dried
  • 1/2 tsp
  • 1/4 tsp
  • 3 Tbsp
  • 3 Tbsp
    vegetable oil
  • 3/4 c
    chopped green onions
  • 1
    green pepper , large (chopped)
  • 1 pkg
    frozen cut okra (10 oz.)
  • 3
    large tomatoes (chopped)
  • 1
    bay leaf
  • 1/2 tsp
    hot sauce
  • 2 c
    chicken broth
  • 6 c
    hot cooked rice

How to Make Texas Ranch Gumbo


  1. Trim excess fat from steak; cut into 1 inch cubes. Combine flour, thyme, salt and pepper; dredge meat in flour mixture. Heat butter and oil in Dutch Oven; add meat and cook until browned on all sides. Remove meat, reserving drippings in Dutch Oven. Add onions and green pepper to reserved drippings; saute until tender. Stir in meat and remaining ingredients, except rice. Cover and simmer 1 &1/2 hours. Serve over rice.
