My family loves these and they are great with iron skillet Onion Cornbread. I took them to the Family Reunion and they were gone before the line was through! Spice them up or down. That's the beauty of this dish.

Ingredients For texas cowboy beans

  • 1 pkg
    pinto beans or cranberry beans (cranberry beans are smoother, still in the pinto family. make sure beans are light colored)
  • enough water to cover plus a couple of inches
  • 3 Tbsp
    chili powder
  • 1 Tbsp
    garlic in oil
  • 2 Tbsp
    lemon pepper
  • 2 Tbsp
    garlic and herb seasoning
  • salt to taste
  • pepper to taste
  • 1 can
    tomatoes, canned italian-style and diced
  • 1 lb
    ground chuck
  • 1 pkg
    taco seasoning mix

How To Make texas cowboy beans

    I usually soak the beans overnight, but sometimes have just put them in water and started cooking them. Your choice.If you soak overnight they cook faster. Be sure and pour off soaking water and add fresh. In a crockpot add; beans, covered in enough water to make almost 3qts. then add seasonings and tomatoes. set on High to get very hot.

    While Beans are cooking; brown ground chuck, drain, add taco seasoning to meat to coat it, heat it until it is very hot, pour into crockpot. Be sure and drain well, greasy beans are not good.

    Cook for a few hours, pour off a little juice and taste the seasonings. If you need, add more. This is usually when I add more GARLIC! If you are not in a hurry, turn Crockpot down to low and cook several more hours. On High a good crockpot will have them done in four hours. Don't cook over six hours. Let them set on warm for about thirty minutes or when you need them. Serve with Cornbread or make another dish. These stand alone very well. One dish meal!
