Ingredients
- 2 medium zucchini or one huge zucchini
- - olive oil
- - salt and pepper
- 1/2 pound ground beef
- 4 cloves garlic minced
- 1 cup black beans
- 1 cup corn
- 1/2 - red onion diced
- 1 package taco seasoning mix
- 1 cup salsa
- 8 ounces monterey jack cheese
- - cilantro for garnish
How To Make tex mex zucchini boats

Step 1cut the zucchini in half. Scoop out the seeds and discard them. Then hollow the zucchini out leaving about an inch of zucchini in the boat. Chop up the scooped out zucchini and set aside. Preheat oven 425 degrees. Place zucchini and baking sheet and drizzle with olive oil and sprinkle with salt and pepper. Place in oven for 35 minutes.

Step 2Meanwhile brown the ground beef in a large skillet. Add the garlic and red onion and cook until the meat in done. Stir in the reserved zucchini, beans, corn, salsa and taco seasoning packet. cook until well incorporated.

Step 3Remove the zucchini boats from oven. Cut the cheese into cubes. Place half the cubes in bottom of each boat. Fill each boat with the meat mixture heaping it up. Top with remaining cheese. Bake for 20 more minutes. Sprinkle with cilantro
